
Here’s a little secret if you want to know how to cook pork tenderloin: Use pork seasoning, but use it late in the cooking process. A simple meat tenderizer will do the trick, but, when grilling pork tenderloin, you can dazzle your guests with the following marinated pork dish:
Grilling Pork Tenderloin
Ingredients You Will Need:
¼ cup soy sauce
2 lemons
3 oranges
2 cloves garlic, crushed
1 ½ tablespoon powdered hot mustard
4 green onions, chopped (include about 2 inches of stalk)
1 pork tenderloin (sliced into 1-inch thick slices)
Olive oil
Meat tenderizer
Mix the soy sauce, juice of one lemon and two oranges together. Place this mix, plus the crushed garlic, hot mustard and green onions, into a plastic bag, and seal. Swish the ingredients around until everything is well blended, and then add the sliced tenderloin. Make sure the meat is saturated with the juices. Marinating it overnight is the best way to get the juices to blend with the meat, but, if you have only a few hours, you’ll still get some of the flavor distributed throughout the meat. So, if you plan on grilling the tenderloin for the evening meal, you have plenty of time to marinade the meat if you prepare it even as late as early afternoon.
Prepare the grill. Make sure you have a good steady flame with about medium high heat. Seek a temperature of about 325 to 350 degrees. If cooking the tenderloin whole, it should take about 40 minutes to cook through. Pork tenderloin steaks, however, should only take about 15 to 20 minutes. Since the tenderloin is sliced for this recipe, you’ll be able to tell pretty much when the meat is done by looking at it. To be sure, however, always cut into the meat. No pink should remain.
Place the meat on a drain to drip dry for about five minutes. Then pat the meat dry with a paper towel, and rub a mixture of olive oil and meat tenderizer onto the meat, making sure to coat all sides. Add other seasonings to taste, and your pork tenderloin will be delicious.
The reserve marinade can be boiled down to make a sauce or can be discarded according to your own tastes. Slice the remaining lemon and orange and use as garnish.
Serve with baked potatoes or grilled potato kabobs and grilled stuffed jalapenos. Jalapenos can be stuffed with bacon bits, cream cheese, mozzarella and a little bit of crushed garlic. Cut the jalapeno caps off, discard seeds and stuff with filling. Just be sure to wear gloves and a face mask whenever cutting into jalapenos, and immediately wash your hands and all used utensils with warm water and soap.
